  • 3 medium beetroot, cooked
  • 1 garlic clove, crushed
  • ½ teaspoon ground cumin
  • 1 lemon, juiced
  • 1 tablespoon olive oil
  • salt

Peel the beetroot, cut it into small pieces, and place in a small bowl with the garlic.

Season to taste with salt and the cumin.

Drizzle over the lemon juice and oil. Mix together and serve chilled.
