Beef Fillet with Walnut Pesto

  • 2 pieces of beef fillet, each about 200 g (7 oz)
  • 50 g (2 oz) toasted walnuts
  • 3 tablespoons chopped mixed herbs, such as coriander, parsley and basil
  • 2 tablespoons grated Parmesan cheese
  • 1 garlic clove
  • 2 tablespoons olive oil
  • salt and black pepper

Heat a griddle or heavy-based frying pan. Season the meat with salt and pepper, add to the pan and cook for 2 minutes on each side or until cooked to your liking.

Meanwhile, place the walnuts, herbs, Parmesan, garlic and oil in a food processor or blender and process until combined but still retaining a little texture.

Serve the cooked steaks with the sauce spooned on top and accompanied with steamed new potatoes and sugar snap peas.
