Barbecue Bacon Burger and Cheesy Chips

  • 250 g (8 oz) oven chips
  • 2 tablespoons vegetable oil
  • 4 slices of smoked streaky bacon
  • 300 g (10 oz) minced beef
  • 1 teaspoon dried oregano
  • 1/2 red onion, very finely chopped (optional)
  • 50 g (2 oz) crumbled blue cheese
  • 50 g (2 oz) very finely grated Cheddar cheese
  • salt and pepper
  • barbecue sauce
  • large burger buns, split and toasted
  • Arrange the chips in a single layer on a large baking sheet and cook in a preheated oven, 220˚C (425˚F), Gas Mark 7, for 15–18 minutes or according to the packet instructions until crisp and golden.
  • Meanwhile, heat the vegetable oil in a medium-sized frying pan and cook the bacon over a medium heat for 4–5 minutes until golden. Remove from the pan and keep warm.
  • While the bacon is cooking, mix the minced beef in a bowl with the oregano, onion, blue cheese and a pinch each of salt and pepper. Shape into 2 burgers and cook in the pan a medium heat for 3–5 minutes on each side until cooked through but still juicy.
  • Assemble the burgers in burger buns with the frazzled bacon and a dollop of barbecue sauce, adding other fillings of your choice if desired.
  • Remove the chips from the oven, tip into bowls and scatter with the grated cheese. Serve alongside the bacon burger.
