Arrange the chips in a single layer on a large baking sheet and cook in a preheated oven, 220˚C (425˚F), Gas Mark 7, for 15–18 minutes or according to the packet instructions until crisp and golden.
Meanwhile, heat the vegetable oil in a medium-sized frying pan and cook the bacon over a medium heat for 4–5 minutes until golden. Remove from the pan and keep warm.
While the bacon is cooking, mix the minced beef in a bowl with the oregano, onion, blue cheese and a pinch each of salt and pepper. Shape into 2 burgers and cook in the pan a medium heat for 3–5 minutes on each side until cooked through but still juicy.
Assemble the burgers in burger buns with the frazzled bacon and a dollop of barbecue sauce, adding other fillings of your choice if desired.
Remove the chips from the oven, tip into bowls and scatter with the grated cheese. Serve alongside the bacon burger.
