Banoffee Pancakes

  • 4 large or 8 small ready-made sweet pancakes
  • 6 tablespoons ready-made toffee sauce, warmed
  • 2 bananas, sliced
  • 150 ml (1/4 pint) double or whipping cream
  • 2 tablespoons coarsely grated dark chocolate or 2 chocolate digestive biscuits, crushed
  • Place the pancakes on 4 plates and drizzle over the toffee sauce. Scatter the sliced bananas over half of each pancake, then fold over to enclose.
  • Whip the cream to soft peaks, then place a spoonful on each pancake. Sprinkle with grated chocolate or crushed chocolate digestive biscuits and serve.
