Lightly grease 4 pieces of foil or greaseproof paper, each large enough to wrap a banana. Put a banana in the centre and add a piece of cinnamon stick, 1 star anise and a piece of vanilla pod.
Sprinkle each with a quarter of the carob and pineapple juice. Seal the edges of the foil or paper together to form parcels.
Transfer the parcels to a baking sheet and bake in a preheated oven, 230°C (450°F), Gas Mark 8, for 3–4 minutes. Alternatively, cook on top of a preheated barbecue or by the side of a bonfire – in both cases, use double-thickness foil to prevent splits and spillages. Serve with crème fraîche or mascarpone cheese.
