Baked Red Fruit and Hazelnut Meringues

  • 2 large egg whites
  • 100 g (3 1/2 oz) caster sugar
  • 25 g (1 oz) ground toasted hazelnuts
  • 350 g (11 1/2 oz) strawberries, hulled and halved
  • 350 g (11 1/2 oz) raspberries
  • Whisk the egg whites in a clean bowl with a hand-held electric whisk until they form soft peaks, then gradually whisk in the sugar until the mixture is thick and glossy. Gently fold in the hazelnuts.
  • Mix together the strawberries and the raspberries in a bowl and divide between 4 x 250 ml (8 fl oz) ramekins or ovenproof dishes. Pile the meringue on top of each.
  • Place on a baking sheet and bake in a preheated oven, 200ºC (400ºF), Gas Mark 6, for 7 minutes or until the meringues are browned. Serve immediately.
