Baked Figs with Honey and Pistachios

  • 12 figs
  • 25 g (1 oz) butter, plus extra for greasing
  • 2 tablespoons soft light brown sugar
  • 2 tablespoons runny honey
  • 3 tablespoons orange juice
  • 1/2 teaspoon ground cinnamon
  • 25 g (1 oz) shelled unsalted pistachio nuts
  • natural yogurt, to serve
  • Lightly grease a small, shallow roasting tin. Cut a cross down into the top of each fig, then arrange them in the tin. Place a little butter on each, then pour over the sugar, honey, orange juice and cinnamon.
  • Place in a preheated oven, 200°C (400°F), Gas Mark 6, for 12 minutes, then scatter over the pistachios and return to the oven for a further 3 minutes until the figs are tender. Serve with natural yogurt.
