Baked Feta with Watermelon

Ingredients
  • 200 g (7 oz) feta cheese
  • 5 tablespoons extra virgin olive oil
  • 250 g (8 oz) watermelon, sliced
  • 75 g (3 oz) pitted Kalamata olives, chopped
  • pinch of dried chilli flakes
  • handful of mint leaves
Directions
  • Tear off a large sheet of kitchen foil. Place the feta on the foil and drizzle over 1 tablespoon of oil. Fold over the edges of the foil to enclose, transfer to a baking sheet and cook in a preheated oven, 190°C (375°F), Gas Mark 5, for 12 minutes.
  • Arrange the remaining ingredients on serving plates, crumble the warm feta on top, then drizzle with the remaining oil.
