Baked Chocolate Orange Mousse

  • 200 g (7 oz) milk chocolate, broken into pieces
  • 100 g (3 1/2 oz) butter
  • 2 eggs
  • 40 g (1 1/2 oz) caster sugar,
  • finely grated rind of 1 orange, plus extra pared rind to decorate
  • icing sugar, for dusting
  • Melt the chocolate and butter in a heatproof bowl set over a saucepan of gently simmering water, making sure the base of the bowl does not touch the water. Leave to cool slightly.
  • Combine the eggs and sugar in a bowl and whisk together using a hand-held electric whisk until thick. Carefully fold in the orange rind, then the melted chocolate mixture.
  • Spoon the mixture into 4 large ramekins and bake in a preheated oven, 180°C (350°F), Gas Mark 4, for 15 minutes until the tops are just set.
  • Leave to cool for 2 minutes, then scatter with the pared orange rind. Serve warm dusted with a little icing sugar.
