Baked Chillies with Cheese

  • 175 g (6 oz) cream cheese
  • 100 g (3½ oz) goats' cheese
  • 100 g (3½ oz) Cheddar cheese, grated
  • 2 spring onions, sliced
  • 12 fresh jalapeño chillies, deseeded, if liked, and halved
  • 1 tomato, chopped

Place the cheeses in a bowl and mix together until smooth, then gently stir in the spring onions. Spoon a little of the cheese mixture into each chilli half, filling the cavity.

Transfer the chillies to a lightly oiled baking sheet and scatter over the tomato. Bake in a preheated oven, 200°C (400°F), Gas Mark 6, for 10–15 minutes until soft and lightly charred.
