Baked Apples with Spiced Fruit

Ingredients
  • 4 cooking apples, cored and scored around the middle
  • 75 g (3 oz) dried cranberries
  • 4 pieces of preserved stem ginger, diced
  • finely grated rind of 2 oranges
  • ½ teaspoon mixed spice
  • 4 tablespoons clear honey
  • crème fraîche, to serve
Directions
  • Place the apples in an ovenproof dish. Mix together the cranberries, ginger, orange rind, mixed spice and honey and spoon the mixture into the cavity of each apple.
  • Pour 2 tablespoons water into the dish. Bake in a preheated oven, 190°C (375°F), Gas Mark 5, for 22–25 minutes until the apples are puffy and cooked through. Serve with crème fraîche.
