Baked Amaretto Figs

  • 8–12 ripe figs (depending on their size; 2 or 3 per person)
  • 4 large oranges, peeled and cut into thick slices
  • 12 tablespoons amaretto liqueur
  • 50 ml (2 fl oz) sweet white wine
  • 4 tablespoons caster sugar
  • 150 g (5 oz) mascarpone cheese, lightly beaten
  • 4 tablespoons finely chopped pistachio nuts
  • Trim the end of the stalks from each fig and cut in half.
  • Place the orange slices in a shallow ovenproof dish and top with the fig halves.
  • Mix together the amaretto, wine and sugar and pour over the fruit mixture. Cover loosely with foil and bake in a preheated oven, 200°C (400°F), Gas Mark 6, for 10–12 minutes.
  • Divide the mixture between 4 warmed plates and spoon over the syrup from the dish.
  • Serve with a big dollop of mascarpone cheese and sprinkle over the pistachios.
