Smoothie, Cocktail and Juice

  • ice cubes
  • 2½ measures tequila gold
  • 4 teaspoons sugar syrup
  • 2½ measures lemon juice
  • 4 dashes orange bitters
  • 1 egg white
  • 2 tablespoons Amontillado sherry
  • lemon wedges, to decorate
  • orange rind spirals, to decorate

Put 8–10 ice cubes into a cocktail shaker with the tequila, sugar syrup, lemon juice, bitters and egg white and shake vigorously.

Pour into 2 highball glasses and drizzle over the sherry. Decorate each glass with lemon wedges and an orange rind spiral and serve.
