Bacon and Egg Baguette

  • 25 g (1 oz) butter or margarine
  • 3 eggs
  • 1 tablespoon chopped chives
  • 6 slices of rindless streaky bacon
  • 2 individual sandwich baguettes
  • your preferred sauce (such as ketchup, brown sauce, barbecue sauce or mayonnaise)
  • 2 small handfuls of rocket or baby spinach (optional)
  • salt and pepper
  • Melt the butter gently in a large frying pan while you beat the eggs with the chives and seasoning in a small bowl. Pour the egg mixture into the pan and swirl to cover the base of the pan. Cook over a medium heat for 2–3 minutes until the base is golden. Flip over and cook for a further 2 minutes or until the egg is set and both sides are golden. Remove from the pan, cool slightly, then cut into slices.
  • While the egg is cooking, arrange the bacon on the rack of a foil-lined grill tray and cook under a grill preheated to a medium setting for 4–5 minutes until crisp and golden.
  • Slice open the baguettes and spread with your preferred sauce before topping with the egg, bacon and rocket or spinach leaves, if using. Serve immediately.
