your preferred sauce (such as ketchup, brown sauce, barbecue sauce or mayonnaise)
2 small handfuls of rocket or baby spinach (optional)

Melt the butter gently in a large frying pan while you beat the eggs with the chives and seasoning in a small bowl. Pour the egg mixture into the pan and swirl to cover the base of the pan. Cook over a medium heat for 2–3 minutes until the base is golden. Flip over and cook for a further 2 minutes or until the egg is set and both sides are golden. Remove from the pan, cool slightly, then cut into slices.
While the egg is cooking, arrange the bacon on the rack of a foil-lined grill tray and cook under a grill preheated to a medium setting for 4–5 minutes until crisp and golden.
Slice open the baguettes and spread with your preferred sauce before topping with the egg, bacon and rocket or spinach leaves, if using. Serve immediately.
