Autumnal Moroccan Vegetable Tagine

Ingredients
  • 2 tablespoons olive oil
  • 1 onion, halved and thickly sliced
  • 3 garlic cloves, finely chopped
  • 1 teaspoon finely grated fresh root ginger
  • 1 teaspoon cinnamon
  • pinch of saffron threads
  • 2 teaspoons ground cumin
  • 4 teaspoons harissa paste
  • 4 tablespoons tomato purée
  • 3 tablespoons clear honey
  • 875 g (1 3/4 lb) mixed autumn vegetables, such as squash, parsnips and sweet potato, peeled and cubed
  • 750 ml (1 1/4 pints) vegetable stock
  • salt and pepper
  • couscous, to serve
  • chopped coriander, to garnish
Directions
  • Heat the oil in a large nonstick saucepan and sauté the onion and garlic for 1–2 minutes.
  • Add the ginger, cinnamon, saffron, ground cumin, harissa paste, tomato purée, honey, vegetables and stock and bring to the boil.
  • Season, cover and simmer for 20 minutes or until the vegetables are very tender.
  • Serve with couscous and garnish with the chopped coriander.
