Asparagus and Udon Noodle Stir-Fry

Ingredients
  • 2 tablespoons sunflower oil
  • 2 garlic cloves, crushed
  • 400 g (13 oz) asparagus tips
  • 8 spring onions, sliced diagonally
  • 400 g (13 oz) straight-to-wok udon noodles
  • 5 tablespoons oyster sauce
  • 5 tablespoons water
Directions
  • Heat the oil in a large frying pan. Add the garlic and asparagus tips and stir-fry for 2 minutes.
  • Add the spring onions, noodles, oyster sauce and water and toss together. Stir-fry for a further 2 minutes, then serve immediately.
