Apple with Salted Caramel Sauce

  • 50 g (2 oz) vegan spread
  • 4 dessert apples, quartered, cored and sliced
  • 50 g (2 oz) light muscovado sugar
  • 50 g (2 oz) stoned fresh Medjool dates, chopped
  • 100 ml (3½ fl oz) vegan cream
  • 2 tablespoons cold water
  • ½ teaspoon sea salt flakes

Melt the spread in a frying pan, add the apples and cook over a medium heat for 2 minutes until starting to soften.

Add the sugar and stir until melted. Add the dates, toss and cook for a few seconds. Pour in the vegan cream and cook, stirring constantly, for 2 minutes to make a caramel sauce.

Stir in the measurement cold water and heat over a low heat until the sauce is smooth, then add the salt flakes and mix well. Serve warm with vegan cream or ice cream.
