Apple, Maple and Pecan Fool

  • 200 g (7 oz) good-quality apple sauce
  • 1 Granny Smith apple, peeled and grated or finely chopped
  • 200 ml (7 fl oz) double cream
  • 250 ml (8 fl oz) fresh custard
  • 3 tablespoons maple syrup
  • 25 g (1 oz) pecans, toasted and chopped
  • pecan biscuits, to serve
  • Put the apple sauce and apple in a small saucepan, cook for 5 minutes to soften, then place in metal bowl in the freezer for a few minutes to cool.
  • Whip the cream until soft peaks form, then stir in the custard. Swirl through the apple purée and maple syrup, then spoon into serving dishes. Top with toasted pecans and serve with pecan biscuits.
