Apple and Ginger Crunch Cream

  • 75 g (3 oz) mixed chopped nuts
  • 1 teaspoon ground ginger
  • 3 tablespoons caster sugar
  • 50 g (2 oz) breadcrumbs
  • 50 g (2 oz) butter, melted
  • 2 x 385 (12 1/2 oz) cans sliced apples, drained
  • 200 ml (7 fl oz) crème fraîche
  • Tip the chopped nuts, ginger, sugar and breadcrumbs into a large frying pan with the melted butter and cook over a medium-low heat for 6–7 minutes, stirring constantly, until crisp and golden. Tip onto a large plate to cool.
  • Meanwhile, divide the apple slices between 6 glass dishes and top each one with a dollop of crème fraîche. Spoon the crunchy topping over the top to serve.
