Apple and Blackberry Strudels

  • 75 g (3 oz) butter, melted
  • 3 Granny Smith apples, peeled, cored and thinly sliced
  • 125 g (4 oz) blackberries
  • 100 g (3 1/2 oz) caster sugar
  • pinch of ground cinnamon
  • 4 large sheets of filo pastry
  • icing sugar, for dusting
  • clotted cream, to serve
  • Mix together the apples, blackberries, sugar and cinnamon. Unwrap the filo pastry and cover with a piece of damp kitchen paper until ready to use it.
  • Working quickly, brush 1 sheet of pastry with the butter and arrange one-quarter of the apple mixture in a sausage shape along one short side, leaving a 2.5 cm (1 inch) space at each end. Fold the 2 long sides in over the mixture, then roll up the pastry to enclose it completely. Repeat with the remaining ingredients to make 4 rolls in all.
  • Place the strudels on the baking sheet and cook in a preheated oven, 200°C (400°F), Gas Mark 6, for 15–20 minutes until crisp. Serve with clotted cream.
