Apple and Almond Tart

  • 325 g (11 oz) ready-rolled puff pastry
  • 250 g (8 oz) marzipan, coarsely grated
  • 2 red-skinned dessert apples, cored and thinly sliced
  • 4 tablespoons apricot jam, warmed
  • 50 g (2 oz) flaked almonds
  • cream or ice cream, to serve
  • Unroll the puff pastry and place on a baking sheet. Sprinkle the grated marzipan evenly over, then arrange the apple slices in rows over the top.
  • Brush the apricot jam over the apple slices and sprinkle with the flaked almonds. Bake in a preheated oven, 200°C (400°F), Gas Mark 6, for 20 minutes until the pastry is golden and cooked.
  • Cut into squares and serve warm with cream or ice cream.
