Amaretto Apricot Dessert

  • 400 g (13 oz) can apricots in syrup
  • 2 tablespoons Amaretto liqueur
  • 4 scoops of vanilla ice cream
  • 8 Amaretti biscuits, crushed
  • Drain the syrup from the apricots into a saucepan and simmer to reduce a little, then stir in the Amaretto.
  • Divide the apricots between 4 bowls and pour over the warm syrup.
  • Add a scoop of vanilla ice cream to each dish and serve sprinkled with the crushed amaretti biscuits.
