Amaretti-Stuffed Peaches

  • 4 ripe peaches, halved and stoned
  • 8 amaretti biscuits, crushed
  • 4 tablespoons mascarpone cheese
  • grated rind and juice of 1 orange
  • Place the peaches in a shallow ovenproof dish, cut side up.
  • Mix together the crushed biscuits, mascarpone and orange rind and divide the mixture into the halved peaches.
  • Sprinkle with the orange juice and bake in a preheated oven, 200°C (400°F), Gas Mark 6, for 15–20 minutes, until tender.
