Amaretti Biscuits

  • 2 large egg whites
  • 175 g (6 oz) ground almonds
  • 175 g (6 oz) caster sugar
  • 3 teaspoons Amaretto liqueur
  • Line a baking sheet with greaseproof paper. Place the egg whites in a clean, grease-free bowl and whisk with a hand-held electric whisk until soft peaks form.
  • Gently fold in the ground almonds, sugar and Amaretto.
  • Place teaspoons of the mixture at least 2.5 cm (1 inch) apart on the prepared baking sheet.
  • Bake in a preheated oven, 160°C (325°F), Gas Mark 3, for 15 minutes, until golden.
  • Leave to cool on a wire rack.
